Caol Ila 1999 Signatory Bottling Note

This 12 year old Caol Ila was distilled on the 12th November 1999 and it was aged in two hogsheads before bottling by Signatory on the 12th December 2011.

Tasting Note by The Chaps at Master of Malt

Nose: Herbal, buttery and sweet. Some fish oil, salinity, bonfire smoke, a bit of heather honey and soft malt.

Palate: Oily and rounded. Some tarmac-like notes, sticking plasters, iodine, manuka honey and parma violets.

Finish: Long and spicy, some of that oily smoke on the tail.

Overall: A delicious Caol Ila.
