A fantastic Japanese shochu made ay the Kyo-ya distillery in Nichinan, based in the Miyazaki prefecture on Kyushu. Kigo Shochu is made using local sweet potatoes and top grade Yamadanichiki rice as well as black and white Koji. They use water from a local mountain spring. This is a lovely drink which is great served neat, or even with green tea.
