The vineyard where Peller Estate harvest the grapes for their Ice Wine is on the Niagara Peninsula in Canada, which is on the same latitude as warmer places. This means that the summers are warm enough for the grapes to grow, and the winters allow for ice wine! The Peller Estate folks pick the grapes when they are frozen, in the middle of the night, and press them, with each grape producing just one drop of intensely sweet ice wine. Truly excellent stuff, it makes for a fantastic way to round of a big meal.
Nose: Juicy citrus and floral honey, thick and sweet.
Palate: Apricots, oranges, light plums and brown sugar.
Finish: Star fruit and sweet marmalade last.
Overall: Serve chilled (though not frozen!) and you've got yourself a winner.
