Crown Estates Tokaji Aszú Bottling Note

Tokaji Aszú might well be our favourite dessert wine. It is made sweet by allowing the grapes to become affected with botrytis (noble rot) which brings out all the natural sugar content. These grapes are picked (grape by grape) and placed in a puttony. These are then added to a cask of new dry wine, and will be macerated for between 1 and 2 days to allow the sugar content to be extracted. This style of Tokaji is world famous, and incredibly respected (even mentioned in the Hungarian national anthem) 5 Puttonyos is a reference to the sugar content, this ranges from 3 to 6 puttonyos (with 6 being the highest).
