Nose: Firm, rustic and authentic, the initial nose is a melting pot of malted barley, farmhouse cider, strong spices (clove, black pepper), juicy fruits (melon, caramelized apple) and honey (lime blossom, acacia). With tremendous integrity, it then develops notes of forest undergrowth, cut grass and green liquorice. Allowed to breathe, its steely minerality (schist, sandstone) comes beautifully to the foreground.
Palate: Full-bodied, lively. The attack reveals a clear expression of Havana cigar smoke. Also spicy (Cayenne, paprika), it gradually envelops the taste buds in a fine fruity (Mirabelle plum, apple cider) and spicy liqueur (cinnamon, star anise, cumin). Gradually and with a hint of sweetness, it invites us to taste the famous Breton cakes, kouign-amann and far. Like the nose, it also reveals minerality and salinity.
