Irish Distillers' first ever virgin Irish oak (Dair Ghaelach in Gaelic) finished whiskey! Single pot still whiskeys that had matured for between 15 and 22 years in ex-bourbon casks were selected for this release and married together before being filled into the Irish oak hogsheads.
Sustainable oak was used for Dair Ghaelach, with trees felled in Grinsell's Wood within Ballaghtobin Estate back in 2010 being transported to north west Spain to be expertly quarter-sawn. After this they head over to Antonio Páez Lobato cooperage in Jerez down in the south. Here the staves dry for fifteen months before being turned into hogsheads and receiving a medium char.

Well aged bourbon matured pot still notes of vanilla, banana and pineapple work well with the Irish oak's contribution of darker woodland spice, cinnamon, coffee and redcurrant.
Spicy oak, fresh straw, plenty of vanilla fudge, pineapple (<a href="/blog/post/redbreast-21-year-old-joins-the-family.aspx" target="_blank">wakamomo</a>?), a little cocoa sprinkled on caramelised apple. Rich allspice.
Very long and increasingly wood spice-driven.
Nose: You just don't get this everyday. Be one with the tree. It's so bloody fresh. Palate: Mossy, green leaf, spiced wood. So flipping balanced. After: The spice rolls, flipping spots of moss and green leaf at you.
Never have I imagined a whiskey as fine as this. Proud to be Irish when I first sipped this - nectar of the gods!
Very very fine indeed. A sip can be felt and savoured for an age. The vapour is worth the price of admission alone. Superb.
A drop of water releases something very special in this cask strength aromatic beauty. A smart investors whiskey - if I could only keep one closed!
I haven't had the pleasure to try anything better than this. Strong, powerful stuff. I like it with a few drops of water. What a finish. Ordered another bottle from tree no7 as I'm afraid when it's gone it'll be hard to replace. I tip my hat to you at Midleton.
