Another edition of Midleton's Dair Ghaelach! These are single pot still whiskeys which are aged for between 15 and 22 years in ex-bourbon casks before being married and filled into Irish oak casks! The distillers used sustainable oak for these, using trees grown in Grinsell's Wood within Ballaghtobin Estate.
Nose: Dried fruits with a drizzle of honey. Toasted cereals, stewed red berries and toffee.
Palate: Drying chocolate notes a first, before a waves of treacle and fresh tropical fruits. A pinch of spicy cardamom.
Finish: Warming oak spices, with a hint of caramel lasting.

Being a fan of Irish whiskeys, single pot still in particular, I was fortunate enough to try a bottle from the Dair Ghaelach series on a recent trip to Ireland. This is a great whiskey. The oak shines through more than traditional Irish whiskeys. Absolutely worth a try.
