Kilchoman STR Cask Bottling Note

Here we have the second of two spring releases from Kilchoman, the STR Cask Matured. The Islay single malt was distilled in 2012, and has been matured in a combination of 43 hand-selected shaved, toasted and re-charred (STR) red wine casks.

The shaving of the casks results in gentler red wine influence, while the whisky is also able to interact with both seasoned and virgin oak, resulting in both bold and more nuanced flavours. In 2019, the whisky was bottled at 50% ABV with an outturn of 14,500 bottles.

Tasting Note by The Chaps at Master of Malt

Nose: Summer fruit compote, rich, buttery toffee and maritime aromas with swirls of peat smoke, baking spices and salted caramel.

Palate: Waves of runny caramel building into sweet summer berries, a dusting of cinnamon, thick lemon curd, buttery shortbread and maritime peat smoke.

Finish: Lingering sweet notes of floral honey and caramel biscuits with fragrant baking spices.

A belter

Really bright on the nose, red apples and cinnamon. In the mouth a nice burst of jam with subtle, salty peat and a super long finish. An absolute stoater of a whisky.
