A single cask Highland Park, distilled on the 30th June 1987 and matured for 22 years in hogshead number 1540 before bottling by Signatory on the 5th November 2009. A release of 341 individually numbered bottles.
Nose: Dry, salty, gristy and a great example of a classic HP nose with building honey notes and sea air.
Palate: Very maritime indeed with plenty of juicy barley, oak and sweet/salty notes. A hint of soy sauce too.
Finish: Interesting; that soy note lasts for quite some time, the whole thing has a very sweet and sour feel.
