A beautiful Caol Ila, filled into cask on the 18th December 1996, and aged for 12 years in European oak sherry cask 19313 before being hand selected by Billy Stitchell for the 2009 Feis Ile.
Nose: A very interesting, spicy and rather herbal nose for a Caol Ila. Hints of aniseed, taragon, maybe even turmeric, alongside seaweed, buttery toffee, citrus, manuka honey and smoke on sea air.
Palate: Stem ginger, toffee, salinity and sweet smoke. Old ropes, salty butter, freshly cut hay and pepper.
Finish: Good length with notes of malt, toffee apple, spices and a little mustard powder!
