This was made using something called "Cask Evolution Exploration". One suspects that means "finishing it in something exotic-sounding." This was aged in bourbon casks, before a finish in Tempranillo wine casks, bottled in February 2009 in individually numbered bottles.
Nose: Strawberries, plums and dates. Notes of oak, toffee apple and fresh fruit. Some malt, spices and vanilla cream, a touch of pine resin, black pepper, chili oil and basil.
Palate: Red fruits; cranberries, redcurrants and dried strawberries. Apple peel, dates, a little almond, some manuka honey and chili, dried oak.
Finish: Good length, with tarragon, pepper, Seville oranges and juicy barley.
