Many botanicals are used in gins today, ever more exotic, ever more specific, but few have taken the time to explore and celebrate the humble juniper berry.
By definition, gin must taste predominantly of juniper and yet nobody seems to concentrate on this aspect when extolling the virtues of their products. Each release in the Origin series uses juniper berries from single estates and Cold-Distills them in a rotary vacuum still. The production process used for each release is identical, so the only difference between them is the provenance of the juniper itself!
Some are more citrusy, others more earthy or floral, but it all comes down to the raw ingredient and the 'terroir' of the region where it was grown.
