Old Tom Gin

Old Tom Gin is a style of gin that was popular in the 18th and 19th centuries. It is made by infusing botanicals into a neutral spirit, then redistilling the mixture. Old Tom Gin is sweeter than other styles of gin, which makes for a great Tom Collins, and is also critical for other cocktails including the Martinez.

Despite its popularity in the past, Old Tom Gin fell out of favor in the 20th century. However, it has seen a resurgence in recent years, with many craft distillers producing their own versions of this historic spirit.
