Hors D'âge Armagnac

Hors d'âge Armagnac represents the zenith of Armagnac production, a designation reserved for the most mature and finely aged eaux-de-vie from the Gascony region of France. The term "Hors d'âge," which translates to "beyond age," is applied to Armagnac blends that have been aged in oak barrels for a minimum of ten years, but often much longer, surpassing even the XO (Extra Old) classification.

As a distilled spirit, Armagnac is crafted from white wine grapes, predominantly the Folle Blanche, Ugni Blanc, and Colombard varieties. The wine used for distillation is acidic and low in alcohol, characteristics that are ideal for producing a robust and aromatic eau-de-vie. Unlike its cousin Cognac, Armagnac is typically distilled once using a column still, which allows for a greater preservation of the grape's original flavours, resulting in a spirit with a richer and more rustic profile.

The ageing process is a critical component of what gives Hors d'âge Armagnac its extraordinary depth and complexity. The spirit rests in oak barrels, often for decades, where it undergoes a series of transformations. The interaction with the wood imparts a range of flavours, from sweet vanilla and caramel notes to rich, dried fruit and nutty undertones. The tannins from the oak also help to soften the spirit, mellowing it over time, and contributing to its smoothness and roundness on the palate.

As it ages, the Armagnac also experiences the effects of evaporation, known as the "angels' share", which concentrates its flavours and aromas. This natural reduction process results in a lower yield of the final product but enhances its quality and character.
