St Lucia 1931 2nd Ed. Bottling Note
A special edition rum from St Lucia Distillers, named after the year that the Dennery Distillery was founded in St. Lucia. In 1972, the Dennery Distillery merged with another to form St. Lucia Distillers. The rest, as they say, is history. Delicious history.
For the second edition of 1931, St. Lucia Distillers selected casks which were laid down in 2004, 2005 and 2006, including a number of American oak and Port casks which were filled with Coffey still rum, as well as casks filled with pot still rum, and even some casks with a 50/50 mix of pot still and Coffey still rum! All these were married in white American oak and lightly filtered to preserve the rum's integrity, which has resulted in some harmless sediment in the bottle.
