Nose Smoothed out rye, presumably from the infusion. This creates something that's also slightly reminiscent of the Cognac version of the classic cocktail this drink is based on. Aromatic anise is the perfect accompaniment.
Palate Venerable toffee, black liquorice and dried apricot and additional integrated walnut richness, if not overt flavour.
Finish Drying, sweet leather and another little lick of sweet anise and rye.
Overall Grown up and classic, belying the complexity of its production. A lovingly developed cocktail.
