Sherry casks have traditionally been used for the maturation of whisky but what about the sherry that was originally stored in those casks? St. George's distillery decided that they would have some of that too, added some of their single malt whisky and subsequently matured them together to create an interesting fortified wine...
Nose: Stewed dark fruits, warm new leather and thick preserves.
Palate: More red fruits, old rumtopf, squashed sun-maid raisins, oiliness, cooking apple.
Finish: Warm and fruity.
Overall: This is unlike anything we have tried.
