Madre Mezcal is produced by the Morales family in Oaxaca, using a cracking combination of Espadín and Cuishe agave, cooked over hot stone in earthen pits and crushed with a stone tahona wheel. A mineral-forward expression, with wafts of smoke fresh herbs running through it.
