Derrumbes Durango is made with Cenizo (Durangesis) agave in Nombre de Dios in the Mexican state of Durango. The process of creating this intriguing mezcal is overseen dutifully by maestro mezcalero Urial Simental, from the cooking of the agave in stone pits underground using black oak, to the fermentation in underground tanks lined with pine wood and wooden stills. A delicious mezcal for fans of unusual agave expressions, with notes of citrus and red berries, plenty of earthy herbs, and balanced, meaty smoke.
