Southwestern Distillery's Cornish Pastis is the first pastis ever created in the UK. A traditionally French spirit made with star anise and liquorice, alongside other exotic herbs, they have given it their own spin, using Gorse flowers that the master distiller foraged himself from Cornish cliff tops and water from a local spring. The result is a richly smooth spirit with bags of citrus and aromatic flavour. Just don't expect to find it in your local bakery.

Good effort but needs refining

I bought a bottle as an experience since I was born and grew up in the south of France and know pastis really well. I would say it's closer to Anisette... But at 41% and cloudy looking, it's not pastis. It's like it's been watered down already. So if you're used to the taste of Ricard or 51, you will be disappointed. I found that if you add a dash of caramel syrup from Costa into your glass, it will sort the taste right out.

Lived in France for ten years. Evening aperitif after a day in the garden always a pastis. My daughter having discovered your distillery while walking the Cornish Costal Path ( a 5 year project with a week each year) treated me to a bottle of your pastis for Christmas.
A very pleasant refreshing drink. Fresher on the palate than many of the French offerings.

Unbelievable!

Whoever wrote the last (ridiculously unhelpful) review, clearly has no experience of drinking Pastis. Having grown up in southwest France, I was basically reared on a combination of Pastis and decidedly dodgy homemade eau de vie... What Southwestern Distillery have created here is nothing short of an absolute masterpiece. It's sweet, without being cloying and fresh without relying on the almost minty flavour that many Pastis brands develop. Enjoy over ice, with a splash of spring water and a strawberry. Unbelievable stuff!
