An eau-de-vie is the French term for a clear, colourless fruit brandy produced either through fermentation of fruit followed by distillation, or by maceration of fruit in grape brandy followed by distillation. Eaux-de-vie typically aims to express clean fruit flavours, with no other factors to influence taste such as cask maturation or additional botanicals.
Nose: Ripe dark cherries with a hint of sour cherry.
Palate: Clean, fresh, invigorating brandy with a core of dark cherry flavors, and hints of oriental spices.
Finish: A short, clean finish.
Overall: This is best served well chilled, and it's also nice served over ice cream or other desserts.
