Lark Distillery

Lark Distillery was the first fully licensed commercial distillery on the island of Tasmania since the ban of 1839. It was founded by Bill Lark in 1992, following many, many letters, calls and discussions that resulted in legal distillation on Tasmania for stills under 40,000 litres.

Bill and his wife began distilling in their kitchen using a 20 litre still, though they have come a long way over the years and now use a 1,800 litre copper wash still and a 1,200 litre copper spirit still. Lark are the only distillery in Australia that hold a licence to mine peat, and as such use 50% peated barley to make most of their whisky, with a few rare examples being made with 100% peated barley. They use a selection of Australian port, Sherry and bourbon barrels to mature their whiskies.
