In 2014 the Gipsy Hill Brewing Company opened on the Hamilton Road Industrial Estate in Gipsy Hill with a focus on creating beers under 5% ABV with big flavours from natural, quality ingredients. In 2016 The Gipsy Hill Brewing Company opened its first bar, The Douglas Fir.
In 2017 the brand invested in a new brewhouse and doubled its brewing capacity to 12,000hl litres of beer, as well as building a separate packaging hall from the brewery, a lab, a canning line (it went to only cans this year as well) and one of the largest cold stores for packaged beer in South London. Recent innovations include a fully accessible tap room, a barrel-ageing program and a pilot brew kit.
