Having launched in Spring 2015, Cloudwater is an exciting craft brewer from Manchester founded by Paul Jones and James Campbell. With no core range, all of their beers are seasonal and limited edition (although favourites may pop up again in subsequent years).
The name comes from Unsui, literally ‘cloud water’, a term used to describe a trainee Zen Buddhist monk as he starts his training or goes on a pilgrimage. An appropriate name for a new venture, said to stem from the line "to drift like clouds and flow like water”. It’s indicative of the team’s desire to remain connected to nature and their ingredients, leading no doubt to their seasonal concept. Jones also points to the Shunryu Suzuki quote “In the beginners mind there are many possibilities, in the expert's mind there are few.” Cloudwater are hardly absolute beginners, but it’s new and creatively exciting project with freedom to explore and create all manner of brews and no doubt a chance to learn plenty along the way!
The experienced team has over 20 years of brewing experience and 27 years in booze retail, with Head Brewer James Campbell having worked at Marble Brewery and Al Wall (responsible for production) having done the rounds on the Manchester bar-scene as manager and cellarm’n at establishments such as Port Street Beer House, BrewDog Manchester, The Salutation, Deaf Institute and Sand Bar, for example.
Their 2,400 litre brewhouse contains a Premier lauter tun, six 4,800 litre fermenters, two 2,400 litre fermenters and a conditioning tank in each size, and including a second archway location two minutes walk away, space to store over 200 barrels! This should mean they don’t have to up sticks as quickly as many successful craft brewers are forced to.
Each season Cloudwater will also team up with a different artist, illustrator or designer to create a succession of beautiful labels.
