Israeli Single Malt Whisky

The story of Israeli single malt whisky is really the story of Milk & Honey, a distillery founded in Tel Aviv by Gal Kalkshtein, the owner of the distillery, along with Amit Dror, Simon Fried and Roee and Naama Licht with the late Dr. Jim Swan acting as consultant. The distillery released its first single malt whisky in 2019 to great acclaim. While the set-up is based on the classic single malt Scotch model, the great heat of Israel means that the whisky matures much faster. To accentuate this hot climate ageing, some whisky is even matured by the heat of the Red Sea. Another point of uniqueness is the use of casks that previously held Israeli wine.
