The impressive Imperium Grande Champagne Cognac from Daniel Bouju sits proudly on the higher end of their range. We believe it ages for 50 years in new Limousin oak casks and is bottled without filtration, resulting in a deep, almost opaque hue and massive flavour profile, chock full of rancio and oak refinement. It comes alongside a gorgeous wooden presentation box and an elegant stopper for the bottle.

Great experience

Nose: Floral and cedar undertones with anise and plum highlights.

Palate: Deep and brooding. Minimal sweetness, spicy pepper, tobacco, leather, a little bitter and harsh in the mid-palate, but smoothing into a long and lingering finish. This is a stout, mouth dominating experience. Not much fruit and quite dry.

Finish: Very long and the only sweetness I detect is in the finish. It is very nice and my favorite part of the experience. Mild tobacco, vanilla, and pine.

Overall: I like the depth of flavor, but I wish there was a little more lightness and subtlety to the flavors, especially the mid-palate. This is a well made and long aged cognac and it is superb in that regard. I personally think it may have been a little better if they bottled it with a little less age, but I am thrilled to have a bottle.
