Corn: A grain used in whisk(e)y production, particularly favoured in America, and in the production of Bourbon, in particular; Bourbon must be distilled from at least 51% corn. Corn was native to America when the first settlers arrived. It contains high levels of starch and protein. Of all grains, Corn proffers the highest yield of alcohol. It gives a corn whisky a gentle sweetness, spice and an earthen character.
