From Scotland with love: Where it all began<\/b><\/h3>\n

In 1918, Masataka Taketsuru left Japan to study chemistry in Glasgow and\u00a0apprentice at distilleries in Speyside<\/a>\u00a0(Longmorn<\/a>) <\/span>and Campbeltown<\/a> (Hazelburn*). A noble quest for knowledge \u2013 or a stealth mission in spirit espionage? You decide.<\/span><\/p>\n

He also found love in Scotland, marrying Rita Cowan, who deserves her own Netflix miniseries. Armed with her support (and some very detailed notebooks), he returned to Japan and helped set up the country\u2019s first whisky<\/a> distillery before founding his own in 1934: <\/span>Yoichi<\/b>, on the northern island of Hokkaid\u014d.<\/span><\/p>\n

The location was no accident \u2013 Taketsuru chose Yoichi for its cool climate, coastal air, and resemblance to the Scottish Highlands. In 1969, he added <\/span>Miyagikyo<\/b>, a second distillery hidden in a misty valley near Sendai, to bring a softer, fruitier counterpoint to Yoichi\u2019s muscular style.<\/span><\/p>\n

Rita Taketsuru (n\u00e9e Cowan) wasn\u2019t just along for the ride. She weathered cultural barriers, wartime suspicion, and the intense isolation of being a foreign woman in 1930s Japan \u2013 all while supporting Masataka\u2019s dream.\u00a0<\/span><\/p>\n

Her impact on Nikka’s survival and growth can’t be overstated. She\u2019s a cornerstone of Japanese whisky, even if she rarely gets a dram\u2019s worth of credit.<\/span><\/p>\n

Where Nikka Whisky Is Made<\/b><\/h3>\n

Japanese whisky purists may want to sit down for this one. While Nikka is proudly Japanese, not every drop historically came from Japanese soil.\u00a0<\/span><\/p>\n

How Nikka Makes Whisky<\/b><\/h2>\n

Now, for the geeks (you know who you are), here\u2019s the production process for Nikka whisky in Japan.\u00a0<\/span><\/p>\n

At <\/span>Yoichi<\/b>, pot stills are <\/span>coal-fired<\/span><\/i>. It\u2019s a tricky, manual process that most modern distilleries have abandoned, but it gives the whisky a heavy, oily texture and complex smoky character. Fermentation is done in wooden washbacks, and worm tub condensers finish the job with a throwback flourish.<\/span><\/p>\n

Miyagikyo<\/b>, in contrast, uses indirect steam heating and longer fermentations, producing a lighter, fruitier distillate. It\u2019s also home to Coffey stills, brought over from Scotland in the ’60s \u2013 old-school column stills that are less efficient than modern ones but create creamy, flavourful grain and malt whisky.<\/span><\/p>\n

Drink it how you like, but the Japanese highball (whisky, soda, ice, care) is the classic move. It brings out the subtle complexity without overpowering it. Prefer it neat? Go for it. No whisky police here.<\/span><\/p>\n

Nikka is one of Japanese whisky\u2019s great stories \u2013 and great storytellers. Built on Scottish technique, sustained by Japanese craftsmanship, and enriched by a transcontinental love story, it’s one of the world’s great whisky makers. **Let’s explain:<\/p>\n

Back in 2021, the Japan Spirits & Liqueurs Makers Association laid out what could\u2014and more importantly, couldn\u2019t\u2014be called Japanese whisky.\u00a0<\/span><\/p>\n

To wear the label, a spirit has to be fermented, distilled, matured (for at least three years), and bottled in Japan. It needs to use malted grains (though other cereals are allowed), and caramel colouring gets the green light too.<\/span><\/p>\n

If it doesn\u2019t tick all those boxes, it ain\u2019t Japanese whisky. Instead, terms like \u2018world whisky\u2019 or \u2018world blend\u2019 are the suggested stand-ins. The industry was given a three-year grace period to get its house in order, and that time\u2019s now up. The rules came fully into play in April 2024.<\/span><\/p>\n

The catch? They\u2019re voluntary. There\u2019s no legal bite, no fines, just a hope that producers will play fair. A polite shrug in regulation form. Maybe some name and shaming.\u00a0<\/span><\/p>\n

Thankfully, the big names are on board. Suntory helped shape the guidelines and sticks to them. Nikka is equally transparent\u2014its website clearly states which of its bottlings qualify as Japanese whisky under the new definition.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"
