There\u2019s an awful lot of choice out there, so to narrow things down, we\u2019ve rounded up some of our favourites from classic non vintages to more expensive vintage wines.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But there\u2019s much more to sparkling wine than Champagne. Prosecco is made using a different method to Champagne where the bubble-producing secondary fermentation takes place in a tank rather than a bottle. Not only is this cheaper but it preserves fresh fruit flavours.\u00a0<\/span><\/p>\n<p><strong>How does it taste?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Honeydew melon, crisp pear, delicately floral with a touch of sweetness. It\u2019s Brut which means it has less than 10g of sugar per litre. It\u2019s mainly made from Glera, the classic Prosecco variety, but there\u2019s also a small portion of Chardonnay which adds complexity. In contrast Paul Dethune is a grower Champagne house meaning that all the grapes used come from the producer\u2019s own vineyards. It\u2019s a blend of 70% Pinot Noir and 30% Chardonnay grapes from Grand Cru vineyards in Ambonnay.\u00a0<\/span><\/p>\n<p><strong>How does it taste?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">This has a super fresh lemony nose and on the palate it\u2019s very dry and tangy with great balance. But the ripeness of the grapes and the three years this spent on lees, dead yeast cells, means that this is austere in any way. With its crisp, raciness this would make a great aperitif especially if you&#8217;re serving smoked salmon blinis.\u00a0<\/span><\/p>\n<p><strong>What does it taste like?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Lean with green apple, lean but ripe, mouth-watering acidity. It was founded by Charles Heidsieck aka \u2018Champagne Charlie\u2019 in the 19th century. It\u2019s non-vintage is consistently one of the best Champagnes around, and seems to be on particularly good form at the moment.\u00a0<\/span><\/p>\n<p><strong>What does it taste like?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Orange and lemon peel on the nose. Palate is creamy like custard and then those citrus notes come in again. It has enough body to serve with chicken dishes as well as fish.\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-42103\" src=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2021\/12\/taittinger-brut-prestige-rose-champagne.jpg\" alt=\"taittinger-brut-prestige-rose-champagne\" width=\"199\" height=\"455\" srcset=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2021\/12\/taittinger-brut-prestige-rose-champagne.jpg 437w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2021\/12\/taittinger-brut-prestige-rose-champagne-131x300.jpg 131w\" sizes=\"(max-width: 199px) 100vw, 199px\" \/><\/p>\n<h5><a href=\"https:\/\/www.masterofmalt.com\/champagne\/taittinger\/taittinger-brut-prestige-rose-champagne\/\"><span style=\"font-weight: 400;\">Taittinger Brut Prestige Ros\u00e9\u00a0<\/span><\/a><\/h5>\n<p><span style=\"font-weight: 400;\">Ros\u00e9 Champagne is usually made from adding a little red wine made from Pinot Noir grapes to a white wine. In this case there\u2019s 15% red from the highly-regarded vineyards of Ambonnay and Bouzy, creating a pink with some serious oomph to it. We reckon this is one of the best Ros\u00e9 Champagnes on the market.<\/span><\/p>\n<p><strong>How does it taste?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Pink Champagne can be a bit meh, but not this one. The house style, however, the opposite of big rich Bolly, Ayala is citrussy, refreshing and clean. Very different, but equally delicious.\u00a0<\/span><\/p>\n<p><strong>How does it taste?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Lemon sherbet fruit with white peach, pear, brioche, pastry and biscuit notes. Lighter style but no shortage of depth here. This 2013 is made up of the usual blend of 60% Pinot Noir and 40% Chardonnay. After a full malolactic fermentation the wine was aged for seven years in the cellars before being released. It was a cooler vintage so expect raciness aplenty.\u00a0<\/span><\/p>\n<p><strong>How does it taste?<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Big burst of green apple on the nose, followed by lemon and yeasty notes. Nyetimber&#8217;s Classic Cuvee is a blend of vintages and offers consistently excellent quality at a good price. I&#8217;d rather drink this than most \u00a330 Champagnes. Gorgeous stuff!<\/span><\/p>\n<p><strong>How does it taste?<\/strong><\/p>\n<p>Citrus nose with brioche, lemon peel and green apple. Made with a blend of pinot noir, chardonnay, and pinot meunier grapes \u2013 grown on the estate&#8217;s 85-acre vineyard in Dorset.
