It\u2019s the business.<\/b><\/p>\n<p><span style=\"font-weight: 400;\">There\u2019s an easy way to spot a cocktail that was created or popularised during Prohibition, look for sugar and fruit juice. Cocktails like the <a href=\"https:\/\/www.masterofmalt.com\/blog\/post\/cocktail-of-the-week-the-bronx.aspx\">Bronx<\/a>, the <a href=\"https:\/\/www.masterofmalt.com\/blog\/post\/cocktail-of-the-week-the-southside.aspx\">Southside<\/a> (apparently Al Capone\u2019s favourite) and our Cocktail of the Week, the Bee\u2019s Knees, contained lots of both mainly to hide the fact that the gin you were drinking wasn\u2019t exactly Tanqueray. It might not even be gin. David A. Embury in <\/span><a href=\"https:\/\/en.wikipedia.org\/wiki\/The_Fine_Art_of_Mixing_Drinks\"><i><span style=\"font-weight: 400;\">The<\/span><\/i> <i><span style=\"font-weight: 400;\">Fine Art of Mixing Drinks<\/span><\/i><\/a><span style=\"font-weight: 400;\">, first published in 1948 when Prohibition was still a recent memory, refers to such concoctions as \u2018pernicious recipes.\u2019<\/span><\/p>\n<p><iframe loading=\"lazy\" width=\"770\" height=\"578\" src=\"https:\/\/www.youtube.com\/embed\/XlR6GnzisSM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen title=\"Bee Jackson Miss_Fancy_Feet (circa 1920s)\"><\/iframe><\/p>\n<h5><strong>It&#8217;s the cat&#8217;s pyjamas<\/strong><\/h5>\n<p><span style=\"font-weight: 400;\">Don\u2019t listen to old grumbles Embury, however, as the Bee\u2019s Knees is actually delicious. The name is a bit of Jazz Age slang that was popular among bright young things of the time. Much, one imagines, to the disapproval of their parents. There\u2019s a story that the phrase was inspired by <\/span><a href=\"http:\/\/www.jazzageclub.com\/bee-jackson-and-the-charleston\/788\/\"><span style=\"font-weight: 400;\">Bee Jackson<\/span><\/a><span style=\"font-weight: 400;\">, aka Miss Fancy Feet or the Charleston Queen. A New Yorker, she helped bring the dance to London with a series of shows at the Piccadilly Hotel and the Kit Kat club. Or the bee\u2019s knees might just be a hip way of saying \u2018the business&#8217;. It was one such phrase along with the &#8216;cat\u2019s pyjamas&#8217;, &#8216;monkey\u2019s eyebrows&#8217; or &#8216;badger\u2019s whiskers&#8217; which all mean absolutely spiffing. You\u2019d say them while dancing the Charleston to your new Duke Ellington 78 while assuring your friends that there would never be a war like the last one.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">To keep it true to the spirit of the roaring \u201820s, we\u2019re using Bathtub gin. Bathtub gin originally got its name as it was usually made from industrial alcohol (hopefully not containing too much methanol or customers would go blind) which would be dumped in a large container, such as a bathtub, and flavours added. If you were lucky this might be juniper essence and sugar, if not turpentine or even sulphuric acid. Mmmm, tangy!\u00a0<\/span><\/p>\n<h5><strong>How to make the Bee&#8217;s Knees<\/strong><\/h5>\n<p><span style=\"font-weight: 400;\">I should hasten to add that the only thing this <a href=\"https:\/\/www.masterofmalt.com\/gin\/ableforths\/bathtub-gin\/\">Bathtub Gin<\/a> has in common with the illicit stuff is that the botanicals, including juniper, orange peel, coriander, cassia, cloves and cardamom, are added to the spirit post-distillation in a technique known as cold-compounding where they slowly give up their aromas. The result is something richer, heavier and more intensely-flavoured than a London dry, and also very lightly tinted from the botanicals. It\u2019s a gin for all seasons but it\u2019s particularly good when paired with strong flavours like lemon juice and honey because it\u2019s not going to get drowned out. In short, it\u2019s a gin that means business.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This brings us back to our cocktail. Made using Bathtub gin, fresh lemon juice and a nice drop of honey, it really is the cat\u2019s pyjamas.\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-30428\" src=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/07\/iStock-1254641432-1024x683.jpg\" alt=\"\" width=\"770\" height=\"514\" srcset=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/07\/iStock-1254641432-1024x683.jpg 1024w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/07\/iStock-1254641432-300x200.jpg 300w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/07\/iStock-1254641432-768x512.jpg 768w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/p>\n<p><span style=\"font-weight: 400;\">Right, let\u2019s get shaking!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">60ml <a href=\"https:\/\/www.masterofmalt.com\/gin\/ableforths\/bathtub-gin\/\">Bathtub Gin<\/a><br \/>\n<\/span><span style=\"font-weight: 400;\">30ml fresh lemon juice<br \/>\n<\/span><span style=\"font-weight: 400;\">15ml honey<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Add all the ingredients to an ice-filled cocktail shaker. Shake vigorously and double strain into a chilled Coupette glass.
