And to make this cinematic serve, we\u2019re looking at a new range of vermouths from The Aperitivo! Co.\u00a0<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Ok, well we\u2019re probably pushing the word cocktail to the limits with today\u2019s drink, a Sweet Vermouth on the Rocks with a Twist. Even capitalising it looks a bit wrong. A serve is probably a better way of describing it as there\u2019s only one liquid ingredient. But there is a bittering agent so let\u2019s just run with it.<\/span><\/p>\n<p><b>We\u2019re watching <\/b><b><i>Groundhog Day<\/i><\/b><b>, again<\/b><\/p>\n<p><span style=\"font-weight: 400;\">We\u2019re covering it because it features in one of the best drink exchanges in cinema history, between Bill Murray and Andie MacDowell in <\/span><i><span style=\"font-weight: 400;\">Groundhog Day.<\/span><\/i><span style=\"font-weight: 400;\"> He orders a \u201cJim Beam, ice, water,\u201d and she orders \u201ca sweet <a href=\"https:\/\/www.masterofmalt.com\/vermouth\/\">vermouth<\/a>, on the rocks with a twist.\u201d He makes a face but notes her choice of drink so he can impress her when he lives the day again the following day. I\u2019m sure we don\u2019t have to explain the plot of <\/span><a href=\"https:\/\/en.wikipedia.org\/wiki\/Groundhog_Day_(film)\"><i><span style=\"font-weight: 400;\">Groundhog Day<\/span><\/i><\/a><span style=\"font-weight: 400;\"> to readers.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">And so next time, to her amazement, he orders \u201csweet vermouth, rocks, with a twist,\u201d and then follows it up with: \u201cIt always makes me think of Rome, the way the sun hits the buildings.\u201d She replies: \u201cThat\u2019s my favourite drink.\u201d He then spoils the burgeoning connection by making a toast to \u201cthe groundhog\u201d rather than \u201cworld peace.\u201d<\/span><\/p>\n<p><iframe loading=\"lazy\" title=\"Groundhog Day-Sweet Vermouth\" width=\"770\" height=\"578\" src=\"https:\/\/www.youtube.com\/embed\/kh7gqf8HzcQ?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p><span style=\"font-weight: 400;\">Bill Murray\u2019s expression at 29 seconds in the clip above is one of the funniest grimaces ever captured on camera. Perhaps only bettered by Charlie MacLean\u2019s wince in the advert for <a href=\"https:\/\/www.dailyrecord.co.uk\/scotland-now\/whisky-expert-gives-hilarious-review-24192251\">Eldorado tonic wine.<\/a><\/span><\/p>\n<h5><b>What\u2019s wrong with sweet vermouth, anyway?<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">So, what is Murray\u2019s problem? Well, if you\u2019re used to just drinking bourbon on the rocks then sweet vermouth will seem very, well, sweet. Also, you never know, it might have been an old bottle of Martini Rosso that had been hanging about since <\/span><i><span style=\"font-weight: 400;\">Ghostbusters<\/span><\/i><span style=\"font-weight: 400;\"> came out.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Well, ignore Murray\u2019s expression if you can because a sweet vermouth on the rocks with a twist is a fine drink. We might think of vermouth as primarily a cocktail ingredient in a Martini or Manhattan but as a mixture of wine, botanicals, sugar and alcohol, it is essentially a cocktail in a bottle<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Do as the Italians and Spanish do and drink it neat just with some ice and a slice of orange. That sweetness makes it wonderful for all kinds of difficult ingredients like boquerones (anchovies in vinegar). In fact, it\u2019s a great friend with all kinds of tapas-type food. Co<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">This is just where the inspiration for The Aperitivo! Co. came from. Founder Richard Tring, a Bristolian restauranter, noticed how many gins there were on the British market, and had what he describes as a \u201cmoment of clarity.\u201d It \u201cseemed absurd\u201d to him that when the two most popular gin cocktails, the Martini and Negroni, required vermouth, there weren\u2019t more domestic brands out there<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This was the start of his vermouth journey but in the beginning, things didn\u2019t go particularly smoothly. Despite over 17 years in the drinks business, his experiments were less than successful. \u201c<\/span><span style=\"font-weight: 400;\">We portioned off three months to make a sweet and dry recipe,\u201d he said, \u201cwe got nowhere. It wasn\u2019t recognisable as vermouth.\u201d<\/span><\/p>\n<h5><b>Like a phoenix from the flames<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">He was running two restaurants at the time, Red Light and a small taqueria, but when the lockdown restrictions came in he was able to concentrate fully on vermouth. In the end, it all came down to trial and error, and having the time to devote to getting it right. \u201c<\/span><span style=\"font-weight: 400;\">Had we not had all this enforced spare time we would not have got anywhere,\u201d he said.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">After some experimentation, the base for all his products is a Macabeo\/ Airen white wine from Spain. He tried a Bordeaux blend but it didn\u2019t have the acidity and he couldn\u2019t get a consistent supply of English wine. According to Tring, he wanted to make a: \u201c<\/span><span style=\"font-weight: 400;\">proper consistent product which would be the house vermouth in restaurants and bars\u201d, so it had to be the \u201ccorrect price and a consistent taste\u201d.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It was meant to be a side project to supply wine to his restaurants but it has become a full-time business. Tring sold up his share of the business and turned the taqueria into a vermuteria. He described Aperitivo! Co. as \u201cthe phoenix from the flames of my restaurants&#8221;.\u00a0<\/span><\/p>\n<div id=\"attachment_43276\" style=\"width: 780px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-43276\" class=\"size-large wp-image-43276\" src=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2022\/02\/full-range-1024x852.jpg\" alt=\"Aperitivo! co vermouth\" width=\"770\" height=\"641\" srcset=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2022\/02\/full-range-1024x852.jpg 1024w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2022\/02\/full-range-300x249.jpg 300w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2022\/02\/full-range-768x639.jpg 768w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><p id=\"caption-attachment-43276\" class=\"wp-caption-text\">The packaging is pretty tasty too<\/p><\/div>\n<h5><strong>There are three versions<\/strong><\/h5>\n<p><a href=\"https:\/\/www.masterofmalt.com\/vermouth\/the-aperitivo-co\/the-aperitivo-co-lyon-dry-vermouth\/\"><span style=\"font-weight: 400;\">Lyon <\/span><\/a><span style=\"font-weight: 400;\">is a classic dry French-style vermouth bottled at 18% ABV. \u201cThis was the hardest one to crack as there\u2019s no sugar to hide behind.\u201d It was designed to be the ultimate Martini vermouth, \u201cwith a major citrus kick,\u201d but also good sipped neat. He settled on a recipe that mixed pink grapefruit and lemon with fennel. It\u2019s rested to allow a certain oxidation and melding of flavours.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">There\u2019s <\/span><a href=\"https:\/\/www.masterofmalt.com\/vermouth\/the-aperitivo-co\/the-aperitivo-co-reus-blanco-vermouth\/\"><span style=\"font-weight: 400;\">Reus<\/span><\/a><span style=\"font-weight: 400;\">, a delicious medium dry Spanish style blanco at 16% ABV which is flavoured with violets, sage and almond with that nuttiness set off by the addition of a small amount of Fino sherry.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">And finally, there\u2019s <\/span><a href=\"https:\/\/www.masterofmalt.com\/vermouth\/the-aperitivo-co\/the-aperitivo-co-turin-sweet-vermouth\/\"><span style=\"font-weight: 400;\">Turin<\/span><\/a><span style=\"font-weight: 400;\">, an Italian style rosso. The kind of thing that Andie MacDowell would enjoy. The aim was to make something that would have the flavour and bitterness to stand up to Campari in a Negroni and bourbon\/ rye in a Manhattan. Tring said he wanted to avoid the \u201ccold mulled wine\u201d thing you get in some vermouth so though it does have classic winter spices like cloves, it really majors on the orange. He uses three types of orange plus the holy trinity of bittering agents: wormwood, gentian and cinchona. \u201cThe acidity of the base wine stops it from being cloying,\u201d he said.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Nevertheless, I\u2019m with Bill Murray here, it is a little too sweet for me just to drink on the rocks with a twist. But it does what it\u2019s designed to do and works beautifully in a Negroni and a Manhattan. Meanwhile, the Lyon dry version melds perfectly into a Martini but I also found myself adding splashes when cooking vegetables to add a zing of citrus and fennel. But it was the Reus, the Spanish version, that was the most successful drunk on the rocks with a twist. Throw in some anchovies in vinegar, and I think even Bill Murray might enjoy it.\u00a0<\/span><\/p>\n<p><b>The Aperitivo! Co. range is available from Master of Malt.
