While some of this experimentation will inevitably make us cringe, there\u2019s also plenty of room for those who create the intriguing and delicious to shine and we&#8217;re always happy to help them share some of that spotlight.<\/span><\/p>\n<div id=\"attachment_26953\" style=\"width: 780px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-26953\" class=\"size-large wp-image-26953\" src=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/50253078_535008153670806_8843140248587206656_o-1-1024x627.jpg\" alt=\"Relicario Ron Dominicano Peated Finish\" width=\"770\" height=\"471\" srcset=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/50253078_535008153670806_8843140248587206656_o-1-1024x627.jpg 1024w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/50253078_535008153670806_8843140248587206656_o-1-300x184.jpg 300w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/50253078_535008153670806_8843140248587206656_o-1-768x470.jpg 768w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/50253078_535008153670806_8843140248587206656_o-1.jpg 2000w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><p id=\"caption-attachment-26953\" class=\"wp-caption-text\">The Dominican Republic, looks nice, doesn&#8217;t it?<\/p><\/div>\n<p><span style=\"font-weight: 400;\">Take <\/span><a href=\"https:\/\/www.masterofmalt.com\/rum\/relicario\/relicario-ron-dominicano-peated-finish-rum\/\"><span style=\"font-weight: 400;\">Relicario Ron Dominicano Peated Finish<\/span><\/a><span style=\"font-weight: 400;\">, an aged Dominican rum from <\/span><a href=\"https:\/\/www.masterofmalt.com\/distilleries\/relicario-rum\/\"><span style=\"font-weight: 400;\">Relicario<\/span><\/a><span style=\"font-weight: 400;\"> (owned by the Spanish-based Beveland Distillers) that was finished in American oak barrels which previously held peated whisky. It\u2019s simultaneously an interesting drink for seasoned rum lovers and exactly the kind of bottling that will convert\u00a0whisky drinkers to the joys of rum. It\u00a0<\/span><span style=\"font-weight: 400;\">shares a similar production process to the brand\u2019s core expression, <\/span><a href=\"https:\/\/www.masterofmalt.com\/rum\/relicario\/relicario-ron-dominicano-rum\/\"><span style=\"font-weight: 400;\">Relicario Ron Dominicano<\/span><\/a><span style=\"font-weight: 400;\">, that is until the end of the maturation process. The rums are made from 100% native Dominican sugar cane juice harvested by hand. The sugar cane juice is fermented for 30 hours with yeasts (the distillery reveals this is saccharomyces cerevisiae, which should delight yeast fans), before the spirit is distilled in two different stills. I told you this rum was interesting. It is distilled initially in a continuous column still and then again in a copper pot still, which Relicario\u00a0says is to create a smoother delivery.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The rums are then matured in 225 litre American white oak barrels in the Dominican Republic, which means you can expect the humidity and temperatures typical of the Caribbean, as well as some sea breeze, to add to the character of the product. Some of you might have been expecting that maturation to take place at an\u00a0<\/span><a href=\"https:\/\/www.masterofmalt.com\/region-style\/islay\/single-malt-whisky\/\"><span style=\"font-weight: 400;\">Islay-based distillery<\/span><\/a><span style=\"font-weight: 400;\">, but Islay holds no monopoly on peated whiskies. Speyside has a few distilleries that embrace the smokier side of things such as\u00a0<\/span><a href=\"https:\/\/www.masterofmalt.com\/distilleries\/cragganmore-whisky-distillery\/\"><span style=\"font-weight: 400;\">Cragganmore<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/www.masterofmalt.com\/distilleries\/glenfiddich-whisky-distillery\/\"><span style=\"font-weight: 400;\">Glenfiddich<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/www.masterofmalt.com\/distilleries\/benriach-whisky-distillery\/\"><span style=\"font-weight: 400;\">BenRiach<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/www.masterofmalt.com\/distilleries\/tomintoul-whisky-distillery\/\"><span style=\"font-weight: 400;\">Tomintoul<\/span><\/a><span style=\"font-weight: 400;\"> and <\/span><a href=\"https:\/\/www.masterofmalt.com\/distilleries\/glen-moray-whisky-distillery\/\"><span style=\"font-weight: 400;\">Glen Moray<\/span><\/a><span style=\"font-weight: 400;\">\u00a0. Relicario doesn\u2019t confirm which distillery housed the whisky and\/or provided the casks, so you can have a fun game of \u2018guess the distillery\u2019 yourself when you taste it.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Relicario Ron Dominicano Peated Finish is definitely the kind of bottling that you would consider to be a sipping rum and I would recommend trying it neat, at least initially, so you can pick out the peaty influence. Relicario went for a more subtle style of smoke, which was the right choice in my opinion. The character of the rum isn\u2019t overpowered by the peat, instead, it adds a really pleasant earthy and savoury quality to balance the sweetness of the molasses and vanilla. It\u2019s made by combining 60ml of Relicario Ron Dominicano Peated Finish, 25ml <\/span><a href=\"https:\/\/www.masterofmalt.com\/liqueurs\/bepi-tosolini-saliza-amaretto-veneziano-liqueur\/\"><span style=\"font-weight: 400;\">amaretto<\/span><\/a><span style=\"font-weight: 400;\"> and a dash of <\/span><a href=\"https:\/\/www.masterofmalt.com\/bitters\/bitter-bastards\/bitter-bastards-grapefruit-bitters-10cl-bitters\/\"><span style=\"font-weight: 400;\">grapefruit bitters.<\/span><\/a><span style=\"font-weight: 400;\">\u00a0Garnish with an orange twist and a maraschino cherry. The rum still takes centre stage with all those nutty, sweet and smoky notes which the grapefruit bitters complement beautifully.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">So, if this sounds like you&#8217;re kind of thing or you&#8217;re after something a bit different, then you&#8217;ll perhaps you&#8217;ll plump for a bottle of Relicario Ron Dominicano Peated Finish.
