MoM learned the story behind his latest creation, <a href=\"https:\/\/www.masterofmalt.com\/liqueurs\/de-kuyper\/acqua-bianca-liqueur\/\">Acqua Bianca<\/a>, made in collaboration with De Kuyper Royal Distillers\u2026<\/b><\/p>\n<p><span style=\"font-weight: 400;\">It reads like something out of a clickbait article \u2013 \u2018this liqueur contains ONE WEIRD INGREDIENT you would NEVER expect\u2019 \u2013 but in the case of Salvatore Calabrese\u2019s new liqueur, it\u2019s absolutely true. Alongside lemons from the Amalfi coast, bergamot from Calabria, cidron (one of the oldest varieties of citrus), from Asia, and another, rather unique ingredient in the bottle: ambergris.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Known among bartenders as \u2018The Maestro\u2019, <a href=\"https:\/\/www.masterofmalt.com\/blog\/post\/your-ultimate-guide-to-storing-spirits-with-salvatore-calabrese.aspx\">Calabrese<\/a> first came across the substance \u2013 the details of which we\u2019ll delve into shortly \u2013 in an antique cocktail book. \u201cI looked at an old recipe from the 1700s, Planters Punch,\u201d he explains. \u201cAnd there was one ingredient that really sparked me, and that was ambergris. And I thought, what is ambergris? There was no word of it in any cookbooks or in any liqueurs. Not only do the world\u2019s leading perfume houses use <a href=\"https:\/\/en.wikipedia.org\/wiki\/Ambergris\">ambergris<\/a> \u2013 incorporating the ingredient explains why their scents are so damn expensive. Also known as \u2018floating gold\u2019, ambergris is a waxy byproduct expelled by sperm whales. One that is unbelievably good at binding, elevating and extending aromas.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The sperm whale diet mainly consists of cephalopods, such as squid and cuttlefish, which are partly made of an indigestible protein called chitin. Over time, this protein builds up in the whale\u2019s digestive tract, where it binds together and forms a mass. (A very valuable mass, at around $20,000 per kilogram).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This lumpy mass is then expelled one way or another \u2013 experts don\u2019t know which end it emerges from \u2013\u00a0before it floats through the ocean and, eventually, onto shorelines. For centuries, clever perfumiers have collected it to extract ambrein, an odourless alcohol that intensifies and lengthens their signature scents.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For Calabrese, it was a lightbulb moment. \u201cI\u2019ve been a bartender since 1966,\u201d he explains. \u201cI know most of the liqueurs, and every liqueur is always the same, strong flavours. Either citrus, minty or herbal or bitter notes, chocolate, nutty, coffee. But what is missing? The aroma.\u201d\u00a0<\/span><\/p>\n<div id=\"attachment_26794\" style=\"width: 780px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-26794\" class=\"size-large wp-image-26794\" src=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/LXPR-Acqua-Bianca-8-1024x683.jpg\" alt=\"\" width=\"770\" height=\"514\" srcset=\"https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/LXPR-Acqua-Bianca-8-1024x683.jpg 1024w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/LXPR-Acqua-Bianca-8-300x200.jpg 300w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/LXPR-Acqua-Bianca-8-768x512.jpg 768w, https:\/\/www.masterofmalt.com\/blog\/wp-content\/uploads\/2020\/02\/LXPR-Acqua-Bianca-8.jpg 2048w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><p id=\"caption-attachment-26794\" class=\"wp-caption-text\">They call him Il Maestro<\/p><\/div>\n<p><span style=\"font-weight: 400;\">Take a nut-flavoured liqueur, for example. \u201cWhen you try to smell it, the gentle note of the nuttiness is there but it\u2019s not present,\u201d Calabrese continues. \u201cWhen you start to drink it, the nutty flavour appears in the middle palate. That&#8217;s when you start to figure out what you&#8217;re drinking.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Working with <a href=\"https:\/\/www.masterofmalt.com\/search\/#search=de%2520kuyper&amp;page=1&amp;sort=_score&amp;direction=desc\">De Kuyper<\/a>\u2019s master distillers, he set about creating a uniquely aromatic liqueur with all-natural ingredients such as lemon, bergamot, peppermint and rose that \u201cexplodes\u201d with aroma and flavours when you taste it. \u201cIt\u2019s not sticky, it\u2019s quite fresh in your palate; intense but delicate,\u201d Calabrese explains. \u201cThat\u2019s what makes a great liqueur. It\u2019s what makes fine spirits and fine wines.\u201d\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a nod to the recipe that inspired <a href=\"https:\/\/www.diffordsguide.com\/beer-wine-spirits\/6625\/acqua-bianca\">Acqua Bianca<\/a>, the quirky bottle \u2013 created by Salvatore\u2019s daughter Francesca Calabrese and her design agency Five Foot Eight \u2013 resembles a book, with the label as the spine. Look closer still and you\u2019ll find a tiny jigger in the \u2018A\u2019 letters, while the \u2018Q\u2019 looks a little like \u20182\u2019 \u2013 as in, H2O.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Despite our probing efforts, the full recipe and details of the production process remains a closely-guarded secret. But we\u2019re willing to accept that in this instance, ignorance probably is bliss. It tastes good, and that\u2019s enough.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">When he first started research and development for the project, around two years ago, Calabrese set out to \u201ccreate a liqueur that was the real centre stage of any cocktail\u201d. With Acqua Bianca, he\u2019s done just that. Stir and garnish with a twist of lemon.<\/span><\/p>\n<p><b>Sal\u2019s Stinger:<\/b><\/p>\n<p><span style=\"font-weight: 400;\">40ml <a href=\"https:\/\/www.masterofmalt.com\/cognac\/h-by-hine-cognac\/\">Hine Cognac VSOP<\/a><br \/>\n<\/span><span style=\"font-weight: 400;\">20ml Acqua Bianca<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pour all ingredients in a mixing glass filled with ice.
