Master of Cocktails Strawberry Daiquiri

Right then y’all. It’s time once again for #MasterofCocktails. This week’s drink (and next week’s come to think of it), are both drinks that you *should* feel comfortable ordering if they’re made correctly.

They are both pink though. Very pink.

This one (as you may have guessed) is a Strawberry Daiquiri. We’re making it properly, which means no strawberry syrup, no strawberry liqueur and absolutely no sweet and sour mix. Shall we?

You’ll be needing these…

So. Rum. I’m using Diplomatico Reserva Exclusiva for this, as I want something meaty to stand up to the strawberries. 50ml into a Boston Shaker please.

Lime juice next. How much? Half. 25ml.

Now Sugar Syrup. Half again. 12.5ml.

On to the strawberries. Half a dozen or so will do. No need to hull them – we’re going to strain it anyway. Whip them in half though as that’ll help them break up in the shaker.

Incidentally, if you’ve got strawberries that are going a bit brown or are past their prime, they’re perfect for this. The ‘over-ripe’ heady flavour and aroma of ultra-ripe fruit is great, and there aren’t any presentation issues.

Pack the shaker with ice, and shake for about a minute. Hard.

The ice will have bashed the fuck out of the strawberries for you. No need for muddling.

Now fine-strain into a chilled Coupe Glass.

And serve. The Strawberry Daiquiri. Absolutely delicious, and not embarrassing *if* done correctly.

The temptation would seem to be to balance the strawberries with a bit more lime (as they’re sweet). This is actually unnecessary as nearly all hand-fruit has perfect acid balance anyway.
