Master of Cocktails The Palmetto

So – the clocks have changed, and we’ve either gained an hour, lost an hour, or gone back in time. It’s unclear which… Either way, it’s time for #MasterofCocktails! This week’s drink is a Palmetto.

Traditionally, this drink would be made with rum, vermouth and bitters, but as we’re using Rumbullion! There’s no need for the bitters in this one. I’m using the Navy-Strength, as that’s what’s behind the bar, but you could certainly use the regular stuff. No problem either way.

First things first – bung a coupette glass in the freezer to chill.

So – grab yourself a measure, and go for 30ml of Rumbullion! Navy-Strength. If you’re using regular Rumbullion!, you’ll probably want 40ml…

That goes into a stirring glass.

Now we’re going in with 40ml Antica Formula Vermouth.

I did try this with Sacred, and Martini Gran Lusso, but the Antica’s mellowness works really well with the spices.

Now chuck in a handful of ice, and stir for 20-30 seconds.

The aroma coming off this is insane. Smells more like cola than cola!

Strain into your nicely chilled Coupette.

Garnish with an orange twist, expressed over the glass.

There we go. The Palmetto. Incredibly straight-forward, but so, so pleasing. Rich, warming, and comforting.

As you probably know by now, #MasterofCocktails recipes appear in the @MasterOfMalt twitter stream from 18:00 every Sunday evening before going up on here the very next day. Last night, I offered the twittershpere a few choices for what we should do next week:

Option 1 – a refreshing, summery classic.
Option 2 – savoury, and one of only 2 alcoholic drinks it’s ever socially acceptable to order with breakfast…
Option 3 – based on a classic, and is massively OTT, ridiculously expensive cocktail porn.

Smoked Paprika, Onion Granules, Celery Salt, Fresh Black Pepper, Balsamic Vinegar, Hot Horseradish (not creamed), Sriracha Sauce, Lea & Perrins, Olive Oil, Tomato Juice, Vodka (I’m using Crystal Head), Palo Cortado Sherry (this one’s from Waitrose), a Lemon and some Celery.
