Right then cocktail fans. Time for this week’s #MasterofCocktails extravaganza. This time, we’re making a Banana Daiquiri recipe. Course we are.
This is a rather prep-heavy drink, and with most of it we will be able put it together a day or so in advance. Following that, all we’ll need to do is remove it from the freezer, give it a quick blitz with a stick blender, tip into a glass and garnish. But first, let’s have a look at the homework we will have done beforehand.
You’ll be needing these…
List of Ingredients
- 1/2 tsp Oscietra Caviar
- 15ml Sugar Syrup
- 60ml Diplomático Reserva Exclusiva
- 30ml Lime Juice
- Bananas
Like I said last week, we’ll be needing a big old whunk of dehydrated banana. Ideally, you’ll want an Andrew James food dehydrator for this, but an oven set to 55c would do…
Top tip – run the slices (taken longitudinally) through a bowl of lemon juice before you dehydrate them. It’ll look prettier that way.
Now, you CAN dehydrate your bananas, but you can also go ahead and deep-fry them instead.
On to the drink. As mentioned, we’re going to be serving our Banana Daiquiri frozen, so we need to give it a day or more to freeze.
Same recipe as ever – half and half again. Thusly:
Start with 60ml of Diplomatico Reserva Exclusiva rum:
Now 30ml (half) of lime juice:
Next, 15ml (half again) Sugar Syrup:
If you’ve got a sweet tooth, you can bang a bit more sugar in, as frozen drinks always taste less sweet.
Now Banana. No mucking about with liqueurs – get yourself a (very) ripe fresh banana. Like this:
If there are brown or bruised bits, don’t worry about it. Just sling them in too. That’s where the flavour comes from.
Now liquidise the whole shooting match, then pop in a freezer bag…
And sling it into the freezer. It needs about a day or so in there and it should be ready to go.
So… Should be good and frozen by now…
The ice crystals in here are a problem. That’s why we’re blitzing it.
Now tip out into a tumbler…
Short fat smoothie straw goes in…
Dehydrated (or deep-fried) banana slice goes on top…
1/2 tsp of Oscietra Caviar goes on the banana slice…
And you’re good to go. The ultimate Banana Daiquiri.
