One of ‘the 4 Cs’ of modern American beer alongside Cascade, Centennial and Chinook, Colombus is sometimes also referred to as ‘CTZ’, grouping it with the similarly alpha acid-rich varieties of Tomahawk and Zeus (14-16.5%). Most often used as a bittering hop, Colombus is favoured by brewers for its oil content as well as its high levels of alpha acids and can provide herbal citrus notes. You'll find it used in the usual American Pale Ales and IPAs as well as Lagers and Stouts. Substitutes include Centennial, Chinook, Galena, Nugget (to which its related) and Millennium.
