Part of ‘the 4Cs’ that are so popular with modern and craft brewers in America (along with Cascade, Centennial and Colombus), Chinook first emerged in 1985 (a cross between Petham Golding and a high alpha USDA male) offering alpha acid levels of 12-14% as well as piney, appetising bitter citrus and spice notes. It’s used predominantly in American Pale Ales and India Pale Ales with alternatives including Nugget, Columbus, Galena and Northern Brewer.
