Nose: An amazing nose. You get the aniseed from the absinthe first, then the mixture of cognac and rye rich bourbon develops both peppery and sweet vanilla notes.
Palate: The effect continues on the palate. It has an amazing mouth feel, cognac softness followed by the peppery rye hit. There's a lot more going here too, with cherries, liquorice and botanicals.
Finish: Smooths out nicely with vanilla and aniseed.
Overall: This is a fine example of this very famous but difficult to perfect cocktail. A favourite.
