Cold-Distilled Absinthe Bottling Note



A supremely delicious absinthe from the legendary Professor Cornelius Ampleforth. He crafts this fine spirit by macerating a selection of superb botanicals in English wheat spirit. These botanicals include traditional fare such as Artemisia Absinthium (Grand Wormwood, from which this spirit gets its name), Aniseed, Fennel and Liquorice, and a select blend of contemporary ingredients including Coriander Seed, Fresh Lemon Peel, and Bitter Orange Peel. After the ingredients have been allowed to macerate, the Professor cold-distils the spirit in a vacuum still.

This extraordinary vacuum still technique allows the liquid in the Professor’s most marvellous contraption to boil at no more than room temperature, retaining all the freshness and extraordinary vibrancy of the botanicals used in its preparation.

Tasting Note by The Chaps at Master of Malt

Nose: Very light and fresh. The lemon, aniseed and fennel are present, but in a completely new, fresh way. The cold-distillation clearly plays a huge role here. ABV is huge.

Palate: A veritable explosion of flavour. None of the 'cooked' flavour, but rather extreme, almost minty summer freshness. Anise is well controlled, allowing the other botanicals to appear in their own right.

Finish: Long and lingering, but with freshness still the watchword.

    JUST A LITTLE WATER FOR ME AND DEFO NO SUGAR.

    YOU WOULD HAVE A JOB DRINKING ANY MALT WHISKY OVER 60% ABV. WITHOUT A LITTLE WATER. THIS ABSITHE IS SO SUBTLE I FOUND THAT I COULD DRINK IT WITHOUT WATER, SOMEHOW IT'S ABLE TO CONCEAL THE ULTRA HIGH ABV I ADDED WATER AT ABOUT 50/50 TO 2CL's AND FOUND THE TASTE RATHER DILUTED FROM THE PREVIOUS NEAT VERSION. HOWEVER I CAME OVER REALLY HOT AND VERY HAPPY " IF YOU KNOW WHAT I MEAN ". LOOK WE ALL HAVE DIFFERENT TASTES AND ALCOHOL TOLLERANCES, IT HIT ME ABOUT 5 MINUTES AFTER CONSUPTION, A DRINK TO BE ENJOYED AND IN MY CASE, TO BE VERY MUCH RESPECTED !!!!

    Stong in alcohol but has a very nice soft taste. No too bitter or too much anise, nice and balanced. Not a cheap bottle but as you are not going to drink it pure it will last fairly long.

    Nice...

    But strong. You have to taste some of it neat but mixing it with sugar and water gives it a sweet/sour taste. You can really taste anise seed like flavours which makes it taste like a stronger sambuca. A hit at my friends 21st!

    Potent..

    ...but very tasteful, when you get the water balance right (though you must have a tiny taste of it pure). Herbal, powerful and recommended, if a tad pricey (for 50cl). x

    Incredibly Light

    This is the frshest and lightest tasting absinthe I've ever tried. Very different to any others (less bitter) but nice.
